Holiday meals
Hi everyone. Sorry it's been so long since I posted. We've been very busy with our house selling and for the last month, I spent almost all of my knitting time making mini stockings for Knitters For Critters.
Now that that's over (13 stockings!) I'm back to it. My next post later today will have knitting. But now for the food.
The week before Christmas, I went to a vegan cookie exchange organized over at the PostPunkKitchen forums. Oh my!
There were, clockwise from 12:00:
- Snickerdoodles
- Almond Joy cookies
- Chocolate-dipped sugar cookies with jam in between
- Raspberry Rugelah
- Candy cane and cinnamon sugar cookies
- Chocolate Chip cookie sandwiches with cream cheese filling
- (not shown) lime coconut cookies
I had a really great time, and it was so fun to get together with a bunch of people my age to share food and fun.
Christmas morning we had a simple breakfast of gimme lean sausages and toast. I made mine in a candycane shape and my husband's in a snowman.
Then we had a snack in the afternoon of local apple and pear with smoked tofu and "blue cheese".
Then for dinner, we made lasagna from Veganomicon. We used their marinara and lasagna as a base recipe with a few changes:
- We made the tofu ricotta but used 1/2 tofu and 1/2 Mediterranean style "feta" cheese, the same brand as the "blue". And we mixed some homegrown chard in with the ricotta.
- We added a layer of Field Roast Italian Sausage plus Follow Your Heart Mozarella and did a layer of FYH cheese on top. The sausage was a mistake as the fennel in it was overpowering to the other flavors in the lasagna. It was even better the second day, though, and we'll be making it again sans sausage.

Happy New Year! I happily got Veganomicon for Xmas! Glad you had a nice Christmas - everything looks delicious.

You scared me! I thought the sausage was real! :-O

Is the 'blue' cheese from the store or homemade? I'd love to find a recipe...or a store around here that would carry such a thing!
